1 Avocado
2 egg
Salt, to taste
Pepper, to taste
Cilantro (optional)
1 roll, bagel, or English muffin – see Notes (optional)
Ham and Egg Cup

This is a super easy and really tasty breakfast. It can be re-heated, so make extra and you will have breakfast made for a day or two. Use a toaster oven, if you have one, so you don’t waste time and energy heating up a big oven.
Ingredients:
2 eggs
2 slices ham (I like Applegate Naturals)
1 teaspoon coconut oil (or your favorite oil)
Pepper, to taste
2 pinches of parsley, chopped
