Ham and Egg Cup Breakfast

Ham and Egg Cup

Servings:  2

This is a super easy and really tasty breakfast.  It can be re-heated, so make extra and you will have breakfast made for a day or two.  Use a toaster oven, if you have one, so you don’t waste time and energy heating up a big oven.

 

Ingredients:

2 eggs

2 slices ham

1 teaspoon coconut oil (or your favorite oil)

Pepper, to taste

2 pinches of parsley, chopped

Directions:

  • Preheat toaster oven or oven to 400 degrees F

  • Grease two ramekins or custard cups with coconut oil

  • Place one slice of ham in each ramekin

  • Crack one egg into each ramekin

  • Top with parsley and pepper

  • Place in toaster oven or oven and bake for 13 minutes, which will give you a firm, but not completely cooked yolk.
