Ham and Egg Cup

This is a super easy and really tasty breakfast. It can be re-heated, so make extra and you will have breakfast made for a day or two. Use a toaster oven, if you have one, so you don’t waste time and energy heating up a big oven.
Ingredients:
2 eggs
2 slices ham
1 teaspoon coconut oil (or your favorite oil)
Pepper, to taste
2 pinches of parsley, chopped
Directions:

Preheat toaster oven or oven to 400 degrees F

Grease two ramekins or custard cups with coconut oil

Place one slice of ham in each ramekin

Crack one egg into each ramekin

Top with parsley and pepper

Place in toaster oven or oven and bake for 13 minutes, which will give you a firm, but not completely cooked yolk.
