Carrot Cake Cupcake

This is a super moist, super yummy carrot cake cupcake.  I wish I could claim the recipe as my own, but it's not.  I found it on the Happy Wifestyles blog, but it is originally from Danielle Walkers Against All Grain - Meals Made Simple.

I made this for my husband's birthday, since carrot cake is his favorite.  He shares his birthday with my nephew and I took the cupcakes to the birthday party, knowing everyone else would rather have birthday cake.  Much to my surprise, the non-Paleo people not only tried these, but raved about them and asked for the recipe, so I'm posting the link:  click here for the recipe.   My husband does eat dairy, so I used cream cheese icing with maple syrup as the sweetener instead of the coconut cream icing.
