Berry Crumble

This is a simple, easy to make, but delicious dessert.  What is better in the summer than fresh fruit baked with a crumb topping?  You can use any combination of fresh fruit that is in season.  It's awesome with peaches too!  It's so good, it was more than half gone before I could get a picture.

 

Ingredients:

Olive oil, to grease dish

1 pint fresh blueberries

1 pint blackberries or raspberries

1 Tablespoon lemon juice

2 cup almond flour

½  cup chopped macadamia nuts

½  cup coconut oil, melted

3 Tablespoons maple syrup

1 teaspoon cinnamon

Dash of sea salt

 

Directions:

  1. Grease 9”x9” baking dish with olive oil.Add berries and sprinkle with lemon juice.Stir lightly.

  2. In a mixing bowl, mix the remaining ingredients.

Spread crumb mixture over berries and bake until the top is lightly browned, about 35 minutes.
