Ground Beef & Maitake Mushroom

 

I found this funky looking mushroom at the West Windsor Community Farmers' Market and had to buy it.  Then I had to figure out what to do with it.  This has become one of my favorite recipes.  The maitake mushroom not only tastes great, but it's good for you.  Studies have shown that the maitake mushroom can boost the immune system, lower blood sugar levels, has cancer-fighting benefits, and promotes heart health and weight loss - click here for more information.  Add some green beans and you have a complete meal.

 

Ingredients:

1 pound ground beef

1 Tbsp minced garlic

1 Tbsp coconut oil

1 large, or a couple small chunks of maitake mushroom

1 Tbsp ghee

Salt, to taste

Pepper, to taste

¾ cup red wine

½ cup coconut aminos

1 Tbsp tapioca starch

Directions:

  • Melt coconut oil in pan over medium heat.  Add garlic and brown lightly.  Add ground beef, stirring until cooked through.

  • Melt ghee in pan over medium heat.  Add maitake mushrooms to pan and salt and pepper to taste.   Saute until small pieces are crispy, about 7 minutes.  Turn mushrooms several times and press down on mushrooms with spatula.

  • Pour wine and coconut aminos in small pan over medium heat.  Bring to a simmer and lower heat if needed to keep at a simmer.  Remove about ¼ cup of liquid and place in a bowl.  Add tapioca flour and whisk until incorporated into liquid.  Whisk into liquid in pan and continue to heat to desired thickness, about 5 minutes.

  • Place ground beef on serving plate.  Top with maitake mushroom.  Pour sauce over mushrooms and ground beef.
