Easy Shredded Chicken

 

I always keep shredded chicken in my freezer. I like to buy chicken when it goes on sale and freeze it, but then I never remember to take it out of the freezer and thaw it in advance, so I end up buying fresh. And eventually the freezer stuff gets freezer burn and I throw it out. I hate wasting food or money, so I can up with this solution.

 

Freezing shredded chicken, either in individual serving size snack bags or in larger quantities is really easy and convenient. It’s great to have on hand to add to soups or salads on those nights you don’t have much time. If you’re really in a rush, you can quickly defrost and add some bbq sauce and make a sandwich. On those mornings when I suddenly realize that I don’t have lunch for that day, I take out some shredded chicken, defrost it in the fridge at work and have a healthy protein for lunch.

 

 

 

 

Ingredients:

 

Chicken, breasts or tenders, in the quantity that you

             want.  If using breasts, cut into 2 or 3 pieces

Diluted chicken broth or water, enough to cover

             chicken

Directions:

  1. Bring enough chicken broth or water to cover chicken to a boil.  I prefer diluted chicken broth, because it adds a little extra flavor, but water works also.  I know this is not specific, but dilute as much as you want, it doesn’t matter how much you dilute – especially if you are adding it to flavorful soups or adding bbq sauce.

  2. Add chicken breast or tenders to boiling broth/water and reduce heat to a simmer for 15 minutes.

  3. Remove from heat and allow to cool for about 5 minutes. 

  4. Here’s the easy part:  if you have ever shredded chicken with forks or fingers, you know it takes a long time and makes a mess.  Use a mixer instead.  I use my Kitchen Aid, but a hand mixer would probably work also.  Just put the chicken in the mixing bowl and turn it on to a low setting and let the mixer do the work.  Mix until shredded to the desired consistency.  A shorter time will leave some chunks, if that is what you want.  Or you can leave it on until the chicken is finely shredded.

  5. Put the mixing bowl and beater in the dishwasher and package up the chicken to freeze if not using right away.
